Gourmet Boutique and La Petite Pearle would like to invite you to an intimite evening tasting three types of Wild-Caught American Caviar and Champagne.

American Hackleback (Scaphiryhnchus Platoryhnchus) is native to the Missouri and Mississippi River systems. It is smaller and faster growing than most of the other sturgeon species, growing to about 38 inches at maturity. The beautiful glistening black eggs are firm, dark, of medium size and have a superb sweet, buttery, nut-like flavor. Some believe its flavor is reminiscent of
Russian Sevruga caviar.

American "Spoonbill" Paddlefish (Polyodon Spathula) are a cartilaginous cousin to sturgeons and is native to the Yellowstone River in Montana. The fish yield roe ranging in color from pale through dark steel-grey and golden "osetra brown". The caviar is smooth and silky with a rich, complex flavor.

Wild Alaskan Salmon Roe which most of you are probably familiar with is another special treat which comes to you from the cold northern waters surrounding Alaska and is delicious spread over a toast with a dollop of cr?me fraiche or butter.
